Cream Cheese Pancakes

Now I want you guys to know that I’m not a culinary whiz kid like some of the other bloggers here. I’m just good at following directions and trying variations once I get the original recipe down pat. That being said, I was scrolling though today and saw a great post by The Hobbit. He posted a recipe for keto pumpkin pancakes. In his comments section, I told him that I used to eat cream cheese pancakes back when I was actually doing good and staying consistent (last year when I was posting regularly). Anyway, he said those sound pretty awesome…so I figured other people might find them awesome too.

Here’s the recipe, if you would like to check them out. Very quick and easy, and I’m sure they would taste even better with some no/low carb syrup. Oh, and follow The Hobbit because he posts some pretty tasty-looking recipes on a regular basis. Dammit, now I need to buy some more cream cheese…

Personal Update 9

Today I weighed myself and I was 262.8 lbs. I know they say weight loss is not linear, but this was a little irritating. I would’ve been mad, but I noticed over the past couple weeks that my clothes are fitting a little looser. Plus I’m still showing pink on my Stix, so I’m ok. I actually upped my calories and felt pretty good from last week, but I ruined it because I was out all weekend and had limited food choices (the only keto-friendly food available was sunflower seeds). I also didn’t track my food intake on MFP this week either, because I didn’t really have time to shop at the grocery store.

These past two weeks have been pretty rough and I’m just glad they’re over. When I haven’t been working or handling some kind of ridiculous errand, I’ve been trying to catch up on sleep. I apologize for missing last week’s update. I had actually gained 1.5 lbs back, but I was still in ketosis so I’m assuming that it was water weight I had from a social gathering meal a few days prior.

I know this is gonna sound like an excuse, but I don’t think my scale is very reliable anymore. Even this morning, I had to weigh myself six times to see a consistent number. Then I took a leak (sorry), and I actually GAINED 0.2 lbs. How does that even work?? I swear it just settles on a number it likes, and is like, “Aahhh ok cool. Let’s stick with this weight until he puts me away for next Monday.” So soon as I get a chance, this scale is gone. I’m thinking maybe it has PTSD since I took it to Afghanistan. *shrug*

Talk to you guys soon. Btw, if you haven’t been looking at the recipes around here (WordPress), I suggest you do. Great ideas, especially those peanut butter cups KetoSweetheart made. I’m a chocolate fanatic.

Personal Update 8

Ok, so I did my weigh-in today and I was 262.4 lbs. So I lost exactly three pounds since last Monday. I’m a little disappointed because I thought it would’ve been more than that, but then I realized something. When I was doing really well before, I was tracking pretty much everything I ate. I mean everything. Almost to the point where it was borderline OCD. But you know what? I saw some good results. So maybe I need to start tracking my calories. Believe it or not, I don’t think I ate ENOUGH calories this week and it possibly slowed down my metabolism. I know I’ve read that somewhere, but I can’t recall at the moment.

Anyway, I was using MFP before which is pretty cool for a few reasons. It has an extensive library of foods that you can log for your daily calories, and you can make your own entry if it’s not in there. Another thing is that it has a pretty good graphic representation of your weight loss progress. Overall, it’s just easy to use. And the people on there are really positive. Here’s a graph of my weight roller coaster so you can see for yourself:

This thing is inaccurate by the way. I was actually closer to 330 lbs., but I was too embarrassed to put that so I didn’t actually start making entries until I got under. You can see how well I was doing last year before I quit for absolutely no good reason and my weight crept back up.

I’ve met some great users on WordPress over this past week, and I’ve seen a lot of awesome recipes. I plan on trying some once I actually go to the grocery store. Keep calm and keto on everyone, lol.
